Quick and Healthy: Sophonie’s Superfoods Salad

Ingredients for the filling:

2 avocados

7.5 oz of canned salmon

4 handfuls of arugula

7.5 oz of cooked cannellini beans

1 fresh large mozzarella ball

7 oz of cheddar cheese

4tbs of olive oil

2tbs of apple cider vinegar

Sea salt and black pepper to taste

Method:

1. Dice the mozzarella and cheddar cheese

2. Slice the avocado

3. In a mixing bowl, combine all the ingredients, mix well and serve!
