Amazingly Delicious: Mom’s Lemon Tart

Ingredients for the shortbread crust:

125g of brown caster sugar

1 egg

250g of flour

100g of melted butter (not liquid!)

1 lemon zest

Ingredients for the lemon dough:

200gr of brown caster sugar

4 eggs

100gr of melted, liquid butter

Juice of 3 lemons + enough water to obtain 150ml of liquid

 

Method for the crust:

  1. Preheat the oven to 390 °F / 200 °C.
  2. In a mixing bowl, whisk the eggs with the sugar until whitened.
  3. Place the flour on a sheet of baking paper and make a well at the centre (big enough to hold the content of the mixing bowl).
  4. Pour the mix from the bowl in the well, add the lemon zest and the melted butter.
  5. Mix and knead the dough until it becomes homogenous and spread with a rolling pin.
  6. Butter the oven dish you wish to use for the tart, place it on top of the crust and flip it around so that the baking sheet is on top of the crust.
  7. Bake blank for 5 min and gently remove the baking sheet.

Method for the lemon dough:

  1. Preheat the oven to 390 °F / 200 °C.
  2. In a mixing bowl, whisk the eggs with the sugar until whitened. Stir in the butter, lemon and water.
  3. Pour the mix on top of the crust and bake for 40 minutes.
