Chicken with Vegetables and Creamy Mustard Sauce

1tbs of coconut oil

1 onion, sliced

2 garlic cloves, chopped

1 bell pepper, rinsed and sliced

250g of mushrooms, rinsed and sliced

2 chicken breasts, rinsed and diced

1 handful of parsley

1tbs of Dijon mustard

1 vegetable stock cube

250ml of crème fraiche

Salt and pepper to your taste



  1. Over high heat, melt the coconut oil in a pan and add the garlic and onions. Cook until golden brown.
  2. Then add the mushrooms, bell pepper, parsley and chicken. Cook for 10 minutes, stirring frequently.
  3. Add the mustard, cream, vegetable stock cube, salt a pepper and reduce the heat to low. Cover the pan and simmer for 10 minutes.


This dish is best served with brown rice.
