1tbs of coconut oil
1 onion, sliced
2 garlic cloves, chopped
1 bell pepper, rinsed and sliced
250g of mushrooms, rinsed and sliced
2 chicken breasts, rinsed and diced
1 handful of parsley
1tbs of Dijon mustard
1 vegetable stock cube
250ml of crème fraiche
Salt and pepper to your taste
- Over high heat, melt the coconut oil in a pan and add the garlic and onions. Cook until golden brown.
- Then add the mushrooms, bell pepper, parsley and chicken. Cook for 10 minutes, stirring frequently.
- Add the mustard, cream, vegetable stock cube, salt a pepper and reduce the heat to low. Cover the pan and simmer for 10 minutes.
This dish is best served with brown rice.
