350g of mixed mushrooms
1/2tsp of chipotle chilli flakes
1 red the onion
1tsp of paprika
100ml of white wine
150g of sour cream
1tbs of coconut oil
1/2 bunch of fresh chives
Sea salt to taste
- Clean an slice the mushrooms, peel, cut in half and finely slice the onion.
- Melt the coconut oil in a pan over medium heat and add the onions, chipotle chilli flakes and paprika. Cook for 2 to 3 minutes, stirring regularly.
- Add the mushrooms and white wine and continue to cook over medium heat, until the liquid has evaporated.l, for 6 to 7 minutes.
- Stir-in the sour cream, reduce the heat to low and cook for 4 to 5 minutes.
This dish is best served with brown rice.
