Spicy and Super Healthy: Moroccan Lentils

Ingredients:

150g of green lentils

500ml of water

3 tbs of olive oil

1 tbs of tomato purée

2 garlic cloves, finely chopped

1 onion, finely chopped

2 tsp of cumin

1/2 tsp of paprika

1 handful of fresh parsley

1 handful of fresh coriander

Salt and pepper to taste

Method: 

  1. Heat 2 tbs of oil in a large pan, add the onion and garlic. Cook for a few mins until softened. Add the spices, tomato purée, and cook for 1 min more, then stir in the lentils, parsley and coriander.
  2. And the water and bring to the boil. Cover and simmer for 20 mins until the lentils are tender.
  3. Add the remaining 2 tbs of oil, mix and serve.
