Easy and Healthy: The Rainbow Bean and Tuna Salad

Ingredients:

160g of sweetcorn

100g of chickpeas

200g of red beans

200g of tuna

1 handful of fresh parsley

4 tbs of balsamic vinegar

1 tsp of Dijon mustard

1 red onion, finely chopped

2 tbs of olive oil

Salt and pepper to taste
Method:

  1. Place balsamic vinegar, olive oil, mustard, salt and pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
  2. In a salad bowl, combine beans, corn, chickpeas, tuna, onions and parsley. Shake the dressing again, and pour over the salad. Stir the salad to coat the tuna and beans with dressing, and serve.
