Quick and Healthy: Smoked Salmon, Quinoa and Avocado Salad

Ingredients:

100g of uncooked quinoa

100g of smoked salmon

1 avocado

½ a cucumber

2 handfuls of baby spinach

1 handful of parsley

1 clove of garlic

2 tbs of olive oil

Juice of 1 lemon

Sea salt and pepper to taste

 

Method:

  1. Cook the quinoa as per the instructions on the packet. Once cooked, place in the fridge to cool for at least 30 minutes.
  2. Dice the avocado and cucumber. Finely chopped the garlic.
  3. In a mixing bowl, add the quinoa, avocado, cucumber, spinach, garlic parsley.
  4. Add the olive oil, lemon juice, salt and pepper and mix all the ingredients together.
