Quick and Easy Starter: Lemony Mushroom Spread

1 tbs of olive oil

250g of sliced mushrooms

1 tsp of dried thyme

1tbs of soy sauce

1 slice of lemon

Zest of ½ a lemon

Sea salt and freshly ground black pepper to taste

1 tsp of hard Liquor (optional)



  1. Heat the oil in a pan and add the sliced mushrooms, salt, pepper and thyme.
  2. Cook for 5 minutes or until the mushrooms have released their juice.
  3. Pour the mushrooms in a mixer and add the lemon zest, the slice of lemon, soy sauce and hard liquor.
  4. Mix until smooth.
  5. Spread over a slice of bread and serve.
