French Style Brunch: Scrambled Eggs with Creamy Mushrooms

3 large or 4 medium free range eggs

120gr of fresh organic sliced mushrooms

1tbs of olive oil

1tsp of finely chopped parsley

1 garlic cloves, finely chopped

1tbs of dairy free crème fraiche


Sea Salt, and fresh ground pepper to taste



  1. Heat the oil in a frying pan, and fry the garlic, mushrooms, salt, pepper and parsley for 2-3 minutes.
  2. In the meantime, break the eggs in a mixing bowl and beat the eggs.
  3. Poor the eggs in the pan and scramble.
  4. Reduce to low heat and add the crème fresh. Cook for 1 min.


To Finish:

Scatter over the parmesan and serve.
