Quick and Delicious: Spinach and Tomatoes Creamy Pasta

Ingredients:

200gr of whole-wheat pasta

5 or 6 cherry tomatoes

1 big handful of baby spinach

½ a tsp of chilli flakes

1 tsp of parmesan

100ml of cream

2 tbs of fresh parsley

1 garlic clove finely chopped

½ a tbs of olive oil

Sea salt and freshly ground pepper to taste

 

Method:

 

  1. Heat the oil in a frying pan and cook the garlic for a couple of minutes over high heat.
  2. Reduce the heat to medium and add the cream and parmesan. Let the cream warm for another couple of minutes.
  3. Add the spinach and tomatoes, mixed them with the cream and let it cook until the spinach is ready, stirring occasionally.
  4. In the meantime, cook the pasta. Once cooked, drain the pasta and add them to the spinach and tomatoes mixture.
  5. Scatter over the parsley and mix well before serving.
