Nutricious and Healthy: Rice with Vegetables

120g of uncooked rice

5 cherry tomatoes halved

1 courgette

3 carrots

120g of mushrooms sliced

Juice of ½ a lemon

1 handful of fresh parsley

2 garlic cloves finely chopped

1 tbs of olive oil

Sea salt and freshly ground black pepper to taste



  1. Cook the rice.
  2. In the meantime, heat the oil in a frying pan over high heat.
  3. Add the garlic, mushrooms, salt and pepper, and cook for a couple minutes or until the mushrooms have released their juice.
  4. Reduce the heat to medium and add the tomatoes, courgettes and carrots. Cover the pan and let it cook for 15 min.
  5. Add the vegetables and parsley to the cooked rice and drizzle with the lemon juice.
