So Healthy: Kale and Quinoa Salad

100g of uncooked quinoa

2 handfuls of kale chopped

150g of crumbled soft goat cheese

1 red chilli finely sliced

20g of almonds

1 handful of fresh parsley

Juice from 1 lemon

2tbs of olive oil

Sea salt and freshly ground pepper to taste



  1. Boil your eggs and cook the quinoa. Once ready, place the eggs and quinoa to cool in the fridge.
  2. For the dressing, combine the lemon juice with the olive oil. Season to taste with sea salt and black pepper.
  3. Slice the eggs, add all the ingredients to a bowl and mix.


Yep, that’s right! You’ve just made a delicious and super healthy salad!
