French, Quick and Easy: Croque Monsieur

Ingredients:

4 slices of whole wheat bread

60g of grated mature cheddar reduced fat

20ml of half fat crème fraiche

100g of pre-cooked chicken breast

2 free range eggs

Olive Oil

Salt, pepper, cumin and paprika to your taste

 

Method:

  1. Heat your oven to 200/220C
  2. Place 2 slices of bread on a baking tray
  3. Spread 15ml of crème fraiche on each slice
  4. Add 15 g of cheddar
  5. Add pepper to your taste
  6. Place the chicken breast on top
  7. Cover with the remaining slices of bread
  8. Spread 15ml of crème fraiche on the top of each slice
  9. Add 15 g of cheddar
  10. Add pepper to your taste
  11. Bake for 20/25 minutes, until the topping is golden-brown.

 

Litte advice:

If you are a goat cheese fan like me, add a few slices on top before cooking the croques monsieurs in the oven!
